Annies Ramblings - Bernina Road Show THIS SUNDAY!

Hi there. This week it is all go getting ready for the Bernina Road Show which is coming to Annie’s this Sunday (9.00 am to 4.00 pm)

6.8.20 1The Glamorous Clams Class is a great way to get to know your sewing machine and try out all the stitches and combination of stitches that you didn’t know you needed. The last class had to be cancelled due to lockdown and this has now been rescheduled for Saturday and Sunday 19-20 September with an additional class the weekend of 7-8 November. Before I forget, the winner of the $50.00 voucher from Annie’s is Suzy Brown from Timaru.

This week’s recipe is a tasty “tin filler”, good with a cup of tea or as a warm dessert with thick creamy yoghurt or custard. (Everything is better with custard according to one of my daughters!)

 

Spicy Yoghurt Cake

  • 250 ml natural yoghurt
  • 125 g butter
  • 375 g sugar
  • 3 eggs
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ¾ c self raising flour
  • ¾ c wholemeal flour
  • ½ tsp baking soda
  • 2 c grated carrot
  • 100 ml sunflower oil
  • 2 tbsp desiccated coconut
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 1 tsp mixed spice

Preheat the oven to 180C. Cream the butter and sugar and then beat in the eggs one at a time. Add in all the other ingredients and fold to combine. (Don’t over mix)

Pour the mixture into a prepared 23 cm cake pan and bake for 40 minutes or until golden and firm to touch.
