• Sweet shortcrust pie pastry
• 1 cup corn syrup (available in the deli section of the supermarket or at Asian food
• stores)
• 3 eggs
• 1 cup sugar
• 2 tbsp melted butter
• 1 tsp vanilla
• 1 1/2 c pecans

Line a deep pie dish with the pasty. Lightly beat the eggs and combine with all the other ingredients and pour into the pie shell.
Cook in a moderate oven until the pie filling is set. Serve warm sprinkled with icing sugar with some vanilla icecream on the side. It is also delicious cold with a cuppa if it lasts that long, as it seems to disappear out of the fridge with alarming speed!
