Smoked Chicken and Spinach Frittatas
- 200 g chopped smoked chicken
- 1 cup cooked cubed kumara
- 2 spring onions
- 100 g wilted spinach
- 5 eggs lightly beaten
- 2 tbsp chopped parsley
- 1/4 c self raising flour
- 1/2 c grated tasty cheese
Preheat the oven to 180 C. Grease 6-8 ramekins. In a large bowl combine the chicken, kumara, sping onions, eggs, parsley, flour and 1/4 c of the cheese. Mix until well combined. Place the mixture into the ramekin dishes and bake for 15 mins. Serve hot or cold with a salad
