Recipes

French Toast

  • 1 tsp mild honey
  • ¼ tsp vanilla essence
  • Pinch of salt
  • 3 tbsp cream
  • 3 lightly beaten eggs
  • 4 slices of ciabatta bread
  • 25 g butter

Preheat the oven to 150C. Warm the honey, vanilla and salt and whisk together with the eggs and cream. Soak the bread in the mixture until soggy. Melt the butter in the fry pan and brown the ciabatta on both sides before placing it into the oven for about 6-7 minutes until puffed up. Serve with a fresh or frozen berry compote or banana, bacon and maple syrup, or your favourite topping.

Serves 2.

Quick Red Curry

  • 1 tbsp red curry paste
  • 1 small onion
  • 600 g beef schnitzel
  • 400 ml coconut cream
  • ½ c roasted peanuts
  • 3 cups steamed rice

Heat the curry paste in a large saucepan, add the sliced onion and stir fry for 2 minutes. Finely slice the schnitzel and add the beef strips to the pan to brown. Pour the coconut cream over the meat, cover and reduce the heat to a simmer and cook for a further 10 minutes.

Serve with steamed rice and top with the finely chopped peanuts, with a helping of green vegetables on the side.
