Recipes

Parmesan Cream Crackers

In the food processor place

  • 1 c flour
  • ½ tsp salt
  • ½ c finely grated parmesan cheese
  • 4 tbsp butter
  • ¼ c cream

Extra flavourings such as pepper, sesame seeds, cumin seeds, garlic or poppy seeds can be added according to your taste.

Pulse in the food processor until the mixture forms a ball of dough.  (Add more liquid gradually if necessary).

Tip the dough onto a floured board and roll out thinly.  Cut into shapes and bake for about 10 minutes or until lightly browned at 200 C.

Store in an airtight container.

Fresh Pineapple Lemonade

  • 1 ripe pineapple (peeled, quartered and core removed)
  • 2 whole lemons
  • 1 c lemon juice
  • 2 tsp fresh grated ginger
  • ½ c caster sugar

Cut the pineapple and lemons into chunks and put into a food processor with the other ingredients.  You may need to do this in two batches.

To serve half fill the glasses with the pineapple lemonade base and then add chilled soda water, ice and garnish with a sprigs of mint.  This also makes an excellent base for a cocktail if you wish to add white rum or vodka. 

The pineapple lemonade base can also be frozen in an ice cube tray to be used for later.
