Creamy Avocado Sauce
- 1 slightly over ripe avocado
- 300ml cream
- 1/2 tsp chicken stock powder
- pinch of pepper and salt
Mash all the ingredients together and simmer the sauce in a pot for 2-3 mins. Serve immediately.
Pumpkin and Chickpea Patties
- 1 cup of grated raw pumpkin
- 2 slices of bread made into crumbs (I used Vogels)
- 300 g can of chickpeas, drained
- 1 tsp cumin
- 1/2 tsp chilli
- 1/2 tsp salt
- 1/2 c parsley
- oil for frying
Place all the ingredients except the oil in the food processor and process until the mixture will hold together. Divide into patties and gently fry until golden on both sides
