Recipes

Crustless Corn Quiche (or Corn Pie as it is known in my house!)

  • 1 large onion
  • 2 cloves of garlic (optional)
  • 2-4 potatoes cooked and cubed (you can use microwave baked potatoes or left over
  • mashed potatoes works well too)
  • ½ c milk
  • ½ tsp salt
  • 3 eggs
  • ½ c flour
  • 1 tsp baking powder
  • ¼ c liquid from the can
  • 1 440gm tin of whole kernel corn
  • 1 c grated cheese

Fry the chopped onion and garlic (I also like to add in some chopped bacon too). Mix the milk, eggs, liquid from the can, salt, flour and b powder in a bowl until blended.  Add in all the rest of the ingredients and pour into a solid bottom dish and cook for 20-30 mins at 210C or until set in the middle.

Peanut Butter Chocolate Chunk Cookies

  • 125 g butter
  • ½ c sugar
  • ½ c brown sugar
  • 1 egg
  • ½ cup crunchy peanut butter
  • 1 ½ c flour
  • 1 tsp baking soda
  • 1 c rolled oats
  • ½ c chocolate buttons (roughly chopped)


Pre-heat the oven to 180 C. Cream butter and sugar, add egg and beat well. Add in flour, baking soda, oats and chocolate and mix to combine. Roll into balls and place on tray. Flatten and bake for 10-12 mins or until firm and golden. (Makes about 40)
